The Nutty Professor - brownie with a crunch

If you've ever dreamt of a brownine with a crunch, then look no further.


Sadly, there's no stroy about this. I just fancied a brownie because it's been one long week at the day job.

 

Prep time: 30 mins Cook time: 30-40 mins

 

Ingredients

220g light brown sugar

270g crunchy peanut butter

70g Cashew nuts, chopped

240g dark chocolate

3 eggs

130g self-raising flour

 

Method


Pre-heat the oven to 180°C, grease a square baking tin. A 20 or 22cm tin or just line a tray like I did.

Put aside 70g of peanut butter and 40 g chocolate

Over low heat gently melt the mixture of chocolate, peanut butter and sugar in a pan until the sugar has melted but not in a liquid form. Leave to cool a bit (5-7mins is enough)

Whisk in the eggs, one at a time

Stir in the flour and chopped cashew nuts

Spoon into the tin and bake for 30 -40 mins - use a cake probe to test
