Stewed Beans & Plantain

🌱 250g Red Red/Oloyin/Black eyed Peas
🌱 1-3 scotch bonnet
🌱 2 medium onions,
🌱 Salt to taste
🌱 Some palm oil, vegetable or coconut oil
🌱 1-2 plantain, sliced

Wash your beans, you may need to pick out some bad ones or stones depending on brand. Most brands are clean.
Add chopped onions and enough water to cover up until an inch over.
If using a pressure cooker, set for 20mins. If not, cook for about 45 minutes -1hr until its soft. If not using pressure cooker, soak overnight before cooking.
While cooking the beans, fry the plantain if going for a fried taste. Otherwise, just slice, salt and leave aside.
There’s an option to just slice the scotch bonnet. Alternatively, you can blend with a small onion.
If using the plantain raw, add the rest of the ingredient and the plantain when the beans is nearing softness, I.e before the beans is completely soft. Let it cook for about 10mins or until the plantain is cooked and properly combined with the beans.
If using friend plantain, add oil, salt and scotch bonnet, cook for about 5 mins to allow the stew to form before adding plantain. Cook for another 5 mins until the stew is thoroughly combined with the plantain
With either option, you can leave some gravy or cook until it’s reduced and thick. As you can see, I prefer this.
