PRAWN PASTA

I love pasta. It's my go to quick and easy meal, especially on days that I've brought work home. My favourite is Linguine and since my favourite veg is spinach, I felt like I hit the jackpot when I found spinach linguine in Tesco. This and my love of seafood makes this recipe my all time favourite but I still can't cook the right amount of pasta.


Whenever the topic of how much pasta is too much comes up, I'm met with several 'I give up' responses from my friends. We all agree Angel hair is easy because most brand do the work, so two is enough for one. I bought a spaghetti measure and the first time I used it, it looked like it wasn't going to be enough, so I added more. Joke was on me, it was actually quite accurate as I found out the second time I used it. Now I use it regularly but I'm still looking for a way to solve the measure problem with the rest.


Something else I love in pasta is basil. I really like pesto so maybe that's why I'm always looking for the taste in my pasta. I've been known to abandon cooking pasta when I realise there's no basil and from the choice of additions at Vapiano's I'm addicted to fresh chilli in pasta.


I've used two types of prawn, a garlic flavoured one and some Atlantic ones. They were both frozen but any type of king prawns is fine.

🛒🛒🛒🛒What you’ll need (serves 3)


✅300g Tesco Spinach Linguini

✅200ml Elmlea Double Cream

✅50g sundried tomatoes

✅2 tablespoon coconut oil

✅1 small onion, chopped

✅3 cloves of garlic, chopped

✅1tsp Salt (adjust to taste)

✅1 -3 red thin chilli (adjust to taste)

✅300g frozen king prawns

✅40g najma chorizo, roughly chopped

✅Handful chopped basil

✅1 cup water (pasta liquid is best)

✅Boil pasta with salt (as per directions) or for around 8-10mins, drain and set aside

✅On low heat, fry onion and garlic for a few mins and add chorizo

✅Add prawns once the chorizo is well incorporated, cooking for around 3 mins, until colour changes

✅ Add cream, half the chilli,sundried tomatoes and pasta liquid and cook on medium heat until sauce is slightly thick

✅ Add pasta, salt if needed and cook for around 3-5mins

✅ Remove from heat, stir in chopped basil, rest of the chilli and enjoy!



Tips

✅ Boil your pasta with a tablespoon of olive oil

✅ Chop the chorizo to be around the same size as sundried tomatoes

✅ Fresh pasta generally don’t need more than a min or 2 of boiling

✅ If using cooked prawns, add when you add pasta

✅The pan is ready for prawns once the onion has slightly changed colour from the chorizo

✅Cook pasta for a few mins less than the packaging says. I generally find packaging time ends up over

✅Save 1/2 or 1 cup pasta cooking liquid to make the sauce

✅Before adding the rest of the chilli, check to see if the half you added is enough
