MACAROON of the coconut kind

I like macaroons but they are not quick to make. I also like coconut candy but the effort involved in chopping the coconut is a lot. Yes I am lazy :) To solve both problems, let me introduce you to coconut macaroon.


 

Prep time: 15-20mins

Cooking time: 10-12mins

Serves: Makes 15-20 medium round macaroons


 

Ingredients

  • 300g Desiccated coconut

  • 400g canned condensed milk

  • Ground almond (optional)

 

Method

  1. Preheat the oven to 150C

  2. Line a baking tray with baking paper

  3. Combine the coconut and almond

  4. Add the condensed milk, mixing well until all the coconut is coated

  5. Wet hand with cold water and mould into any preferred shape

  6. Place each macaroon on a lined tray and bake for 10-12 mins or until golden brown
