Dodo...no not the bird, PLANTAIN!

Many people ask me, "what's plantain?" I always reply with "big bananas but not bananas". It sounds daft but it's the best description I can think of.


You'll find it at ethnic shops or your local supermarket, depending on how much of ethnic produce they sell. When I've found it at Tesco, it's green most of the time. If you are not in rush to cook it, buy it. All you have to do is wrap it in a couple of plastic bags or newspapers for a few days. Do check daily to see if it's at the desired state. It should be the same colour as the one below and soft like a ready to eat banana.


Although this recipe is for frying, plantain can also be boiled or grilled.

 

Ingredients

  • Frying oil - vegetable or sunflower

  • Plantain

  • Salt

Method

  • Slice the plantain as shown below and salt slightly

  • Slightly salt

  • Heat the oil and fry

  • Place on paper towel to remove excess oil before transferring to plate

Serving

You can serve with a bit of salsa, chilli sauce or with a side of rice or fried eggs
